Gluten-free Mini Corndog Bites

Sometimes you just want some yummy childhood comfort food. These Mini Corndog muffin bites taste better and are healthier than the corndogs I ate growing up and they are so simple and delicious!

I use this boxed gluten-free cornbread mix from Aldi. To make them dairy free, I use almond milk. Anytime a baking recipe calls for oil, I usually substitute it with applesauce. I do this for cakes, muffins and breads. It makes the food moist and cuts out some of the fat and calories.

Once the cornbread ingredients are mixed, I fill mini muffin cup tins 1/2 - 3/4 full with cornbread batter. Then, I slice the hotdogs into four pieces and put one piece in the center of each muffin tin. Bake according to the package directions.  Check half way through. This makes 24 mini corndog muffins.

These make a great addition to chili! Serve with butter, or mustard and ketchup if you want them to taste like a good ‘ol corndog.
