Baked Shrimp Scampi

What's for dinner? Baked Shrimp Scampi! This recipe is adapted (by one of my favorite food blogs, Well Plated) from Ina Garten's recipe and it is OH, SO GOOD! 

I used 2 lbs of 12oz med. shrimp, deveined and peeled, tails on (they didn't have tails-off:( ) olive oil, lemon juice, salt, pepper, unsalted butter (I use vegan butter), 4 garlic cloves, 1 sm. shallot, dried oregano, 1 egg yolk and panko bread crumbs (I use GF/Dairy free). I served over GF pasta. This served 5 of us with a little left-over.
